Fancy Hank's Executive Chef and Owner, Mike Patrick, says that Memphis is certainly an inspiration for their style of cooking. “I have travelled through the south of America multiple times in the last 10 years, and I am in love with the flavours, the countryside and the people associated with BBQ. Memphis has a particularly big history of music as well as BBQ and our dry rubbed pork shoulder pays homage to this. We finish with a dry spice rub, after smoking the pork over red gum and charcoal for up to 12 hours.”
